Ingredients
10g dried yeast
250g plain yoghurt
150ml water
2tsp nigella seeds
550g strong plain flour
Pinch salt
40ml oil, plus a little extra oil for griddle
Method
Place the yeast and yogurt into a large bowl. Boil the water and seeds then pour into the bowl, mix well to combine.
Add 200g of the flour, combine it well using your hands, then cover and prove for 25 minutes.
After the 25 minutes, add the salt, oil, and the rest of the flour, give this a really good mix, then cover and prove again for an hour, it should just about double in size.
Knock the dough back and then divide it into 6 little balls. Roll out on a floured board to about 100 – 125mm circles.
To cook the bread, brush with a little oil and either fry, or place on a griddle pan for about 30 secs each side.
